Vegan Coconut-Lemon-Banana-Muffins

serves 6 muffins

Zutaten

  • 140 g wholegrain flour
  • 80 ml/g lukewarm soy milk
  • 90 g coconut blossom sugar (or any other kind of sugar)
  • 25 g melted coconut oil
  • 1 pinch salt
  • 1 tbsp baking powder
  • 2 tbsp vanilla sugar
  • 1 pkg Alpro coconut pudding (or a yoghurt)
  • 1 pkg lemon zest
  • 1 banana

Anleitungen

  • Preheat the oven to 200 degrees upper and lower heat
  • In a bowl, mix all the dry ingredients
  • Mix the liquid ingredients in a seperate bowl
  • Combine the dry and liquid ingredients and mix to a smooth dough
  • Cut the banana in pieces and mix it in the dough
  • Put everything in muffin trays and bake for approx. 20 minutes at 200 degrees
  • Take the muffins out of the oven, prepare a coffee and enjoy bite by bite!
