Zutaten

  • 1 (not too thick) zucchini
  • 1 big sweet potato
  • 1 pkg canned tomatoes
  • 3 tbsp tomato paste
  • 100 g (olive) tofu
  • 250 g soy yoghurt
  • 2 tbsp brewer's yeas
  • 1 teaspoon italian herbs
  • 1 pinch salt, pepper, garlic

Anleitungen

  • Preheat oven to 190 degrees upper and lower heat
  • Mix the tofu with the yoghurt, herbs, garlic and salt
  • Slice the sweet potato and zucchini along the long side
  • Place two slices sweet potato horizontally and two to three slices zucchini vertically, put 1 tbsp of the yoghurt mix in the middle and then fold it to a ravioli shape and place them in a baking tin
  • Mix the tomato with the paste and some salt
  • Put the tomato mix on the ravioli and add some brewer's yeast
  • Bake the ravioli for about 35-45 min and buon appetito!
