Cinnamon Pull Apart Bread

  • 500 g wholegrain spelt flour
  • 150 ml milk of choice
  • 50 g sugar (don't use birch sugar because the yeast dough won't rise)
  • 50 g butter
  • 2 eggs
  • 3 tbsp cinnamon
  • 1 pkg dry yeast
  • 1/2 tbsp salt
  • 1 pkg vanilla sugar

To Spread On Top

  • 20 g melted butter
  • 50 g birch sugar
  • 2 tbsp sugar


  • Mix flour, vanilla sugar, sugar, salt and cinnamon. Heat milk lukewarm, add butter and melt. Then stir in the yeast. In a blender kneat the dry and the liquid ingredients to a dough. Then place the dough in a bowl, cover with a dishcloth and let it rise for 1 hour in a warm place (oven).
  • The dough should be approximately doubled and have a firm consistency. Remove from the bowl and roll out to a rectangle.
  • Cut the dough into rectangular pieces and cover with meltd butter plus sprinkle with cinnamon and sugar.
  • Place the rectangles in a buttered or paper-lined mold and let them rest for another 30 minutes.
  • Bake in a preheated oven at 175 degrees top and bottom heat for 30-35 minutes. Take out and enjoy with vanilla sauce.
