Anleitungen
Preheat the oven to 180 degrees
Oven baked vegetables:
Peel the sweet potatoes and quarter them depending on their size. Cut them into wedges. Wash the lemon and cut into wedges as well.
Slice the garlic bulb (with its skin) in half. Peel the shallots and ct them in half lengthways.
Mix everything and put it with the sage leaves on a baking sheet. Mix it with olive oil, salt and pepper and bake for 35-40 minutes at 180 degrees (until the sweet potatoes are cooked).
Eggplant-tahini:
Pierce the eggplants depply on all sides with a fork. Place it on a seperate baking sheet, add it to the sweet potato vegetables and bake for approximately 30 minutes (until the skin has turned black).
Cut in half and use a spoon to scoop out the soft pulp and chop. Peel the garlic and chop finely as well.
Mix the tahin with the chopped aubergine, salt, pepper, lemon juice, paprika powder, olive oil and honey. Season to taste with lemon juice and salt.
