Oven Baked Vegetables With Sweet Potatoes And Eggplants-Tahini

Zutaten

oven vegetables

  • 2-3 sweet potatoes
  • 1 big lemon
  • 1 garlic bulb
  • 4 shallots
  • 1 handful sage leaves
  • a pinch of salt, pepper

aubergine-tahini

  • 3 eggplants
  • 100 g tahini
  • 3 garlic cloves
  • a pinch of salt, pepper
  • 2-3 big spoons lemon juice
  • 1 tbsp sweet paprika powder
  • 1 big spoon olive oil
  • 1 tbsp honey

Anleitungen

  • Preheat the oven to 180 degrees

Oven baked vegetables:

  • Peel the sweet potatoes and quarter them depending on their size. Cut them into wedges. Wash the lemon and cut into wedges as well.
  • Slice the garlic bulb (with its skin) in half. Peel the shallots and ct them in half lengthways.
  • Mix everything and put it with the sage leaves on a baking sheet. Mix it with olive oil, salt and pepper and bake for 35-40 minutes at 180 degrees (until the sweet potatoes are cooked).

Eggplant-tahini:

  • Pierce the eggplants depply on all sides with a fork. Place it on a seperate baking sheet, add it to the sweet potato vegetables and bake for approximately 30 minutes (until the skin has turned black).
  • Cut in half and use a spoon to scoop out the soft pulp and chop. Peel the garlic and chop finely as well.
  • Mix the tahin with the chopped aubergine, salt, pepper, lemon juice, paprika powder, olive oil and honey. Season to taste with lemon juice and salt.
